From Kim Sam Bok to Doeji Gogi Kimchi

For years this dish appeared on our menu as Kim Sam Bok, and many regulars still order it by that name. The old label was a house short form; today the dish carries the more accurate Korean name Doeji Gogi Kimchi, literally pork with stir-fried kimchi. The recipe has not changed: same dish, same taste.

What is Doeji Gogi Kimchi?

Tender pork is stir-fried with our homemade, well-aged kimchi. The kimchi mellows and deepens in flavour while the pork soaks up the seasoning: rich, lightly tangy and made for a bowl of rice. In Korea this preparation is also known as kimchi duruchigi.
